Buy some wood chips from your local grocery store. Mesquite is a subtle but tangy and full-bodied variety. Soak the chips overnight so they’re waterlogged and will smoke without catching fire. When you’re ready to grill, seal the chips in a pouch made of aluminum foil, and poke holes in the top. Place the meat around the pouch, and cook as normal. You’ll get a great smoky bite.
